Sage

Includes: aromatic oils, bitterness and tannins, but also vitamin C and nicotinuric acid.
Action: inhibits inflammation, has antifungal properties, stimulates digestion, calms the stomach, strengthens the nerves and improves mood. Tea reduces sweating, calms the cough.
Perfect for the liver: with apples. Perfect for the Italian specialty saltimbocca, i.e. veal schnitzel with ham. Seasoning poultry, fish and rabbit. The leaves can be fried in a pancake batter. Young sage leaves can be eaten with cream, sugar and diced orange. Butter and sage vinegar are also made.
Good advice: season sparingly, because it can become unpleasantly bitter. Suitable for both freezing, drying, and keeping in oil.

Mint

Includes: essential oils, bitterness, garbniki, as well as iron and potassium.

Perfect for: lamb roast. The basic ingredient of the famous mint sauce. It improves the taste of drinks, crumble, fruit soups and desserts. A bit of mint is recommended for soups and stuffing.
Good advice: a pinch of sugar makes its aroma even more subtle. It can be cooked. Perfect for drying. Mint leaves can also be candied.

Lavender

Includes: mainly essential oils.
Action: it should be used frequently by people suffering from both light migraine and dizziness.
Perfect for: flowers – for seasoning jams and making lavender vinegar. Flowers can also be candied. A little lavender can be added to the spicy herbs used to flavor the stews.
Dry it in exposed trays.

Thyme

Includes: essential oils and tannins and a little bitterness.
It works: calms down, dehydrates the body, stimulates digestion, slightly lowers the temperature. Perfect for: roast goose. A good seasoning for roast pork, potato dishes, baraniny, fungi and liver. Basic seasoning for ratatouille (french tomato dish, eggplants, zucchini and peppers).

Good advice: the strong aroma of thyme develops when cooking and stewing dishes. Perfect for drying; it does not lose its taste values.

Borage

Includes: essential oils, vitamin C., potassium,calcium.

Action: antidepressant,cleansing the blood, stimulates the metabolism, strengthens the heart and nerves. Perfect for: cucumber dishes, as well as fish and eggs.

Good advice: borage flowers can be eaten. Borage should not be cooked, only heat up briefly. Suitable as a seasoning for oil and vinegar.

Rosemary

Includes: essential oils, bitterness and tannins.

Action: increases the appetite, but also calms down, relieves headaches, strengthens both the heart and nerves, and the circulatory system.

Perfect for: a leg of a ram. Great for poultry, venison, tomato sauces, rotisserie ribs and new potatoes.
Good advice: place the twigs on the charcoal while grilling. Boil small twigs with the food, but before serving – remove. The rosemary is great for drying.
