meatballsWe usually buy canned food during holidays, when we don't have time or desire to cook. You can easily and quickly prepare a hot meal from them. However, their taste leaves much to be desired.

Canned food was invented more than two hundred years ago. Previously, it was known to smoke meat, storage in salt, pickling, but all this did not satisfy Nicholas Appert. His genius intuition told him another method: deprive food of air, so close it tightly and boil in water at a temperature of 100 degrees, so that some of the air "evaporates."”. And this rule has survived – theoretically unchanged – to our time.

Nutritionists say, that industrial canned food is better than home canned food. Automated processing lines clean, they clean, can preserve food without touching the food with their hands, everything is investigated, measured and made by professionals. It is difficult to question the opinion of specialists, but why preserves in jars are so distasteful?

Polish regulations are very liberal with regard to the content of canned goods. To, which in other countries would be disqualified, with us it goes to stores without any problems. These preserves are mainly produced on the basis of obsolete, traditional technologies. For example, products of this type, based on sauces, should be properly stabilized. This effect should be achieved by adding a small amount of stabilizing substances permitted by the Polish sanitary authorities, emulsifying and thickening agents. Meanwhile, our sauces are in many cases thickened with flour, as a result, they have a heterogeneous consistency.

Meatball sauce.
The very appearance of meatballs, meatballs or tripe raises many reservations. The sauces are layered, bits of fat are floating in them, the surface of canned food is often darkened. The proportion of sauce to meat may also be surprising. Is it really possible to call the dish "Meatballs in tomato sauce”, if nearly three-quarters of the contents of the jar are sauce? In addition, the dishes are often badly seasoned and not tasty. However, all these disadvantages are within the Polish and industry standards, thus the preserves are admitted for sale.
