Beef steaks in English, skewers etc.. It is fried in a pan previously roasted with thick salt, short, on a strong fire – on very hot fat (preferably in olive oil, possibly oil mixed with butter). They are salted at the last minute, after turning over in the pan, and even just on the plate.
