Horseradish and onion

Dry even small pieces of horseradish after grating, crush or grind. Keep in a closed jar. Before use, soak for 15…20 min in cold water, filter. Use,how fresh,for sauces.

Onions or garlic before using in salads or herring are scalded with boiling water or baked in the oven (they will be milder and less fragrant).
