Meat or fish can be fried without fat in the usual, no teflon pan, if coarse salt has been roasted on it.
Fishes, if they are not to be eaten right away, not rinsed, cuts along, cleans the insides, a little sugar inside, and then it rubs inside and out thick,salt roasted in a pan (inside you can also make thyme, except salmon, which you need to sprinkle a little more with sugar or add tarragon), stacks one on top of the other in a stoneware or other vessel, to which there is no access to light and keeps you cool. They can stand for days. Before use, they need to be soaked a little, so that they are not too salty.
